Probably the best flapjack in the world ... ever!
We all love flapjack ~ we try to pretend it's a "healthy option" snack, just because it has oats in it, but really with all the sugar ............ it might not be mega healthy, but it is mega delicious!!
We have tried many different recipes over the years, it's difficult to find a recipe that everyone agrees on as some like their flapjack chewy while others like it crunchy. This is our preferred recipe of the moment as it tends to be soft and chewy in the middle and crunchy around the sides. H says it is the best in the world ...... ever!!
The recipe comes from a very very old cookbook I had as a child (do you remember it Mummy?)
The recipes in this book are wonderfully simple and easy to follow, the children love using it.
You will need ~
12 oz soft brown sugar (we use a mixture of what ever type of sugar we have available)
12 oz butter
16 oz porridge oats
(this is enough to make a roasting tin amount of flapjack)
1: Heat the oven to Gas Mark 4 - Electricity 350* F or 180* C
2: Put the sugar and the butter into and saucepan and heat gently on the cooker hob (DO NOT LET IT BOIL)
3: Remove from the heat and add the porridge oats, stirring them in thoroughly with a wooden spoon.
4: Grease a tin, taking care to get in the corners (we use a roasting tin ~ there are a lot of us!)
5: Put the ingredients into the tin, spreading it evenly into the corners.
6: Bake in the top half of the oven for 15-20 minutes (until it is beginning to turn brown)
7: Leave to cool, then turn out onto a wire tray and cut into fingers.
Apparently it is best enjoyed with a big mug of hot chocolate.....
